Who needs a cute little kitchen apron when you have one from Lowe's, right?! I love having little boys!
Apple Bundt Cake (or "butt cake".... as my beloved husband ALWAYS calls it.... lovely).
1 c. vegetable oil
2 c. sugar
3 eggs
1 t. vanilla
2 c. SELF-RISING flour
2 t. cinnamon
1/2 t. nutmeg
1/2 t. salt
3 c. apples, chopped
1 c. raisins (optional)
Mix oil, sugar, eggs, and vanilla. Add flour, cinnamon, nutmeg, and salt. Blend in raisins and apples. Use WELL-GREASED and floured bundt pan (seriously, WELL-GREASED.... I've never had a recipe stick to the pan as badly as this one can). Bake in 350 degree oven for about 1 hour.
And the icing on the cake (literally.... and seriously again, don't skip this icing. It is unbelievable!)
1/4 c. margarine
1/2 c. brown sugar
1/4 c. evaporated milk
1/2 t. vanilla
1 - 1 1/2 c. powdered sugar
Cook first three ingredients on medium-high heat, stirring constantly, until brown sugar dissolves (boil for approximately 1 minute). Add vanilla and powdered sugar until desired consistency is obtained. Drizzle over cooled cake. ENJOY! :)
One of the best parts of this recipe: the amazing frosting pools in the middle of the cake (YUM!) When I came in from playtime with the kiddos outside to prepare dinner, I noticed that someone had cleaned out the pool. At dinner, I laughed and said, "Fess up! Who ate all of the frosting?!" (Aaron was the guilty party.... with a big grin on his face.... and a belly full of sugar!)
